Gluten-Free Flour Blend
This flour will measure cup for cup in most of your existing recipes. You must remember though, gluten free flour doesn't act the same as regular flour so some adjustments will need to be made for things like yeast breads. For batter type recipes like pancakes, muffins and cakes though, I find this is as close to wheat flour as you'll ever get! I make this in large batches and store it in an airtight container...it allows me to whip things up in no time at all. Most of my recipes will state if the wheat flour can be swapped out with this gluten free version.
3c brown rice flour
2c white rice flour
2c tapioca flour (tapioca starch is the same thing)
2c sweet rice flour
4tsp xanthan gum
Simply pop everything into a large mixing bowl and stir with a whisk or a spatula until everything is well combined. Store in an airtight container. If you don't bake a lot it will stay fresh longer if you store it in the fridge...just be sure to bring it to room temperature before baking with it.
Most of these items can be found at specialty grocery stores such as Choices or Whole Foods. If you are lucky enough to have an asian market near by you will likely find most of these ingredients at a fraction of the cost of the big box stores!
