Mexican Style Ground Beef
My family asks me to make this weekly. Soft and crunchy tacos are two of their favourite things, which is fine by me because it's so easy to make! Plus, I can use the leftovers to make so many different meals. I can easily transform the smallest bit of this into quesadillas for the kids lunch the next day or a buddha bowl for my lunch, perhaps make taco salads the next night for dinner or even stir the tiniest bit into some Mexican rice to turn it into a main course. So needless to say I don't mind making this over and over again because my family is happy and it frees up a lot of time for me during the week! I'd recommend making a double batch if you have a particularly busy week ahead of you... you can thank me later lol.
Serves 4.
1 lb ground beef
2-3 cloves garlic (minced)
2tbs chili powder
2tbs paprika
1tbs cumin
1tsp salt
1/2 green pepper (diced)
1/2 red pepper (diced)
1/2 onion (diced)
2 tomatoes (diced)
1/2 can of black beans (drained)
1/2c frozen corn
1 handful cilantro (chopped)
1 lime (juice)
Place the ground beef and the next 9 ingredients in a large skillet on medium heat. Cook until the beef has browned. Pour in enough water to cover. Bring to a boil. Reduce heat to low, and simmer for 15 minutes or until the water has evaporated. Now stir in the black beans, frozen corn, lime juice and chopped cilantro. Test for seasoning and serve.
This is delicious in soft tacos, crunchy tacos, quesadillas, taco salad or burrito bowls. Enjoy!
