Fall Spiced Roasted Pork

I absolutely LOVE this cut of pork. Its tender, juicy and looks so beautiful when its roasted like this. I know it may look a bit daunting to make, but it's really not I promise you! I highly recommend you give it a try. I love serving this with my Wild Mushrooms with White Wine Butter Sauce.

Serves 4.

1           4 bone pork rib roast cut from the loin end.

1tsp       paprika

1tsp       cinnamon

1tsp      cloves

1tsp      garlic powder

1tsp      ginger

1tsp      all spice

1tbsp     sea salt

1/2tsp    fresh cracked black pepper

1/2c        brown sugar

3tbsp     olive oil

Rub the seasonings all over the pork roast and put it in a small roasting pan. Leave it marinaring at room temperature for 2 hours or refrigerate and let marinate overnight.

Preheat oven to 500 degrees.

Bring the roast to room temperature if it has been in the fridge.

Now roast the pork for 12 minutes at 500 degrees. Then reduce the temperature to 325 degrees and continue roasting for another 40 minutes. If you have a meat thermometer it should read 155 degrees at the thickest part of the roast. You want the pork to be very slightly pink still, otherwise it will be dry.

Take the roast out of the oven and let it rest for about 10 minutes before carving.
