Warmly Spiced Oven Roasted Yams
One of my most favourite foods is yams. Sometimes I'll just steam a yam, mash it up, sprinkle it with a bit of salt and have it as a quick lunch or a healthy satisfying snack. This is one of my all time favourite ways to eat them though!!!! If you gave me the choice between a sweet treat or a plate of these, I'd pick these every time. Hot or cold these are delish. Give them a try, I'm sure you'll love them as much as I do. I can't really give you an accurate serving size, for most I suppose these would suffice as a side dish for four but for me it's a serving size for one LOL.
My favourite dishes to serve with these would be HARISSA STEAK and ZA'ATAR MUSHROOMS.
Preheat oven to 350.
2 large yams (or 4 small)
1tsp onion powder
1tsp paprika
1tsp salt
1/2tsp turmeric
1/2tsp cumin
1/4tsp cinnamon
a few cracks of fresh ground pepper
drizzle of olive oil
Scrub the skins of the yams really well, don't peel them. Cut into 1" rounds and toss them in a large bowl.
Now sprinkle with all the spices and drizzle with olive oil and give them a good toss.
Spread them out on to a parchment lined cookie sheet and place them on the center rack of your preheated oven.
Roast for about 45-60 minutes or until they are quite soft. Serve immediately or feel free to let them cool to room temperature if you want to eat them with your fingers as a healthy snack.
