Banana Nut Overnight Oats

Banana Nut Overnight Oats

Makes 10 servings.

2                            ripe bananas (mashed)

400ml can            coconut milk (really any type of milk will work)

1tbsp                     vanilla

1/4c                       chia seeds

1/2c                       oats (divided in half)

2tbsp                    brown sugar or maple syrup

1/8tsp                    nutmeg (I use fresh ground)

pinch                     salt

 

1tbsp                     cinnamon

1/4c                      toasted pecans (crumbled)

Divide your oats into 2 quarter cup portions and set one of them aside. Now simply toss the first 8 ingredients (half the oats) into your food processer. Whiz for a few seconds until everything is well combined.

Stir in the remaining 1/4c of oats and divide the mixture into 10 single sized serving dishes. I like to use the empty glass jars from the petit pot yogurt that I buy.

Simply top each portion of overnight oats with a dusting of cinnamon and garnish with some toasted pecans. Cover and store in the fridge for up to 1 week.
