Wilted Baby Spinach & Kale with Garlic and Feta
Serves 4.
1 bag of baby spinach & kale
1-2 cloves of garlic (crushed)
1/2c feta (crumbled)
1tbsp olive oil
Salt and pepper to taste
Sautee the garlic in the olive oil until it becomes fragrant (don't burn it!) then toss in the spinach until just slightly wilted. Remove from heat and add the crumbled feta. Add salt and pepper to taste. Serve immediately.
*Tip- Add chickpeas or diced tofu to this and you have a complete meal in minutes!
