Greek Salad Dressing/Marinade
This salad dressing is quick and easy to make and only tastes better the longer it sits, so feel free to whip up a double batch to keep in the fridge for later use. It's not only great as a salad dressing it's an amazing marinade on chicken, fish and pork!
1/2c olive oil
1/4c vinegar
1 lemon (juice)
1tsp yellow mustard
2 small cloves of garlic (crushed)
1tbsp oregano (fresh or dried)
1/2tsp Basil (must be dry)
1/4 small hot red chilli (optional)
salt and pepper to taste
Toss in a bowl and give it a whisk. Use immediately or store in the fridge for later use...it tastes better and better as it sits!
