Pears and Carrots Caramelized in Honey
This is a lovely side dish, it has deep rich flavours while still tasting fresh. It pairs (no pun intended) nicely with my Spicy Oven Roasted Chicken and Curried Wild Rice. These will become a family favourite no matter what you pair them with. Enjoy!
Serves 4.
3 very firm pears (peeled, cored and cut in thick slices)
4 large carrots (peeled and sliced)
2tbsp butter
2tbsp honey
salt and pepper to taste
chopped parsley for garnish
Put the butter and honey in a non-stick skillet on medium low heat. Sprinkle the pears with salt and pepper and then pop them into your skillet. Leave them without stirring for 5 minutes. This allows them to caramelize. Now give them a stir and let sit undisturbed for another 5 minutes, if the honey looks like it's starting to burn be sure to lower your heat a bit.
Remove the pears from the skillet and place in a bowl. Set aside to use later. Be sure to get all the yummy butter and honey when you transfer them.
Now toss your carrots in the skillet and fill it half way with water and a pinch of salt. Cook the carrots until they are fork tender. Drain and then put them back into the skillet.
Pop the pears back into the pan with the carrots and cook on medium heat until the pears are fork tender but still slightly crisp...you don't want mushy pears!
Test for seasoning, add more salt and pepper if needed. Garnish with a little chopped parsley and Bob's your uncle!
TIP- This can easily be made vegan by simply swapping out the butter with a vegan butter like Earth Balance
