Lemon Rosemary Chicken with Roasted Figs and Grapes
I have an absolute love affair with figs! Every year when they are in season I get almost giddy with excitement. So of course I have a few fig recipes to share...I just came up with this one and it is divine. When the figs are roasted with the chicken they develop an unexpected deep and nutty flavour. You really should give this a try.
4 chicken thighs and legs attached
1 lemon
1tbsp grainy mustard
2 garlic cloves (crushed)
1tsp salt
3 sprigs fresh rosemary
6-8 fresh ripe figs
1c seedless grapes (any type)
Preheat oven to 350 degrees.
Toss everything except the figs in a bowl and give it a stir. let sit to marinate at room temperature for an hour or overnight in the fridge.
Once marinated pop everything including the figs onto a parchment lined cookie sheet and roast at 350 degrees for about an hour or until the juices of the chicken run clear.
Serve on a bed of rice and garnish with a few more sprigs of rosemary and some fresh figs. Enjoy.
