Vanilla Infused Port Cranberry Sauce
This is the best cranberry sauce you will ever eat! Even people that say they hate cranberry sauce love this one, I think it's because the Port wine adds depth and sweetness which nicely balances the often jam-like flavour of regular cranberry sauce. Plus... I am half Portuguese so I always have Port on hand lol.
Don't just save this for your turkey dinner though, here are a few of my favourite ways to eat it:
Why not make a grown up PBJ sandwich? I gave a jar of this to my butcher and he loved it so much thats what he started using it for lol!
Paired with cheese on an appetizer platter
Served with roasted pork
Stir a teaspoon or two into some greek yogurt
Spread some on a toasted cinnamon raison bagel
Put a dollop on your morning oatmeal
Here's my recipe:
Makes about 2 cups.
1 bag fresh cranberries
1/2c water
1/2c port wine
1 -1/2c sugar
1tbsp vanilla
1/2tsp cinnamon
1/8tsp cloves
Pop everything into a medium sized pot and bring to a boil. Reduce heat and continue to cook for about 10 minutes or until the sauce has thickened and the cranberries have popped open.
Once the sauce has thickened remove from heat and let cool completely. This will keep in in the fridge for at least two weeks.
