Za'atar Mushrooms
Za'atar is a widely available Middle Eastern spice blend...you just have to know to look for it lol. If your regular grocery store doesn't sell it you can find it at most Persian or Middle Eastern Markets. Trader Joes even sells it periodically! Za'atar is actually a generic name for a blend of herbs. The base of the blend is usually oregano, thyme, savoury and often sesame seed. Every region or family has it's own special blend, much like Herbs de Provence in France. There are no two blends alike but they are all slight variations on a common theme.
My favourite dishes to serve with these are HARISSA STEAK and OVEN ROASTED YAMS.
Serves 4 as a side dish.
5c mushrooms (any type)
1/2 red onion (thinly sliced)
2 roma tomatoes
1 large garlic clove (crushed)
1tbsp za'atar
1 handful of flat-leaf parsley (chopped)
A squeeze or two of lemon
Simply pop everything into a medium sized non-stick pan and sauté until the garlic and onions become fragrant and the mushrooms are slightly soft.
