Oven Roasted Cauliflower
I don't know about you but I get sick of eating the same vegetable side dishes over and over again! I love this recipe because it's super easy to make and it's way more interesting than just boring old steamed veggies. I love serving this at a dinner party because the presentation is so beautiful! To serve, I simply cut a wedge for each person. Give it a go, I'm sure it will become part of your regular veggie rotation too.
1 head of cauliflower
1/4c plain greek yogurt
1tbsp onion powder
1tsp garlic powder
1tsp salt
1tsp rosemary or thyme
1tbsp grainy mustard
drizzle of olive oil
Preheat oven to 350 degrees.
Wash the cauliflower and remove any green leaves. Place it on an oven-safe dish or a parchment lined cookie sheet.
Toss all the remaining ingredients...except the olive oil...into a bowl and give it a good stir. Pour the mixture on-top of the cauliflower ensuring it's evenly coated. Now drizzle with olive oil.
Place the prepared cauliflower into the oven and roast for about an hour or until it is your desired tenderness.
