Rye Waffles with Smoked Salmon and Lemon Yogurt Dill Sauce

This is ABSOLUTELY DELICIOUS!!!!!!! It also has the added benefit of being such a beautiful presentation that you can serve it for a special brunch... even though it is ridiculously easy to make. I promise you, it looks impressive but its insanely easy to prepare. I prepare the salad first but don't dress it until the last minute, make the yogurt sauce next, cook the waffles and then will fry the eggs last. If you don't have a waffle iron you can make these as pancakes instead just omit the cornstarch.

Serves 4 generously.

Salad: mixed baby greens (herb blend), slivered sweet onions, blackberries, capers.

Dressing: Herbs de Provence Olive Oil, Blackberry Ginger Balsamic Vinegar, salt and pepper to taste.

Toss together and set aside...toss it with the dressing just before serving.

Lemon Yogurt Dill Sauce:

1c      non-fat greek yogurt

1/4c   sour cream

1        zest and juice of 1 lemon

1        small handful of chopped dill

salt to taste

Stir together and set aside.

Savoury Rye Waffles:

1c         rye flour

1c         all-purpose flour

1/4c     corn starch

2tbsp   baking powder

1/2tsp   salt

1tsp      onion powder

pepper to taste

 

2           eggs (beaten)

1/4c      butter (melted)

2c         milk or buttermilk

Toss all the dry ingredients into a bowl and give it a good stir with a whisk. Now pour the wet ingredients into the dry and whisk together until smooth and lump free. This can sit for up to an hour before you use it if you'd like to prep it a bit ahead of time.

Once your waffle iron is pre-heated simply put a scoop of batter onto the waffle  iron and cook until crisp. Your waffle iron will come with specific cooking directions.

Fried Egg- 1 or 2 over easy fried eggs per person.

Smoked Salmon- I like to have 3 slices of smoked salmon per person.

To assemble toss the dressing on your salad and put an equal portion on each plate.

Place a waffle or two, slightly off to the side of the salad and smear with the Yogurt Sauce.

Place the fried egg(s) ontop of the waffle and pop the yolk, add a few slices of smoked salmon and Voila...Youre done! Enjoy!!!
