Dark Chocolate Lava Cake in Less Than 5 Minutes

What’s a girl to do when she’s craving dessert but doesn’t have anything sweet in the house? And to make matters worse I have one kid that’s gluten intolerant and another that can’t have dairy! Well, they say necessity is the mother of invention and this recipe was created because of exactly that lol. This literally takes me less than five minutes to make from start to finish and I can either make it as a single serving by dividing the recipe by four or I can make 4 servings using the recipe as is and it still only takes 5 minutes…including cooking time! This recipe can be made either gluten free, dairy free or both if necessary. If you don’t have any allergies to consider…go ahead and make this with regular flour and dairy. This really is THE best dessert recipe for a tricky crowd. Are you ready? Here we go….

1c  flour

1/2c  sugar

6 tbs  coco powder

1 tsp  baking powder

1c milk

 4  eggs — room temperature

1/4c   melted coconut oil

2 tsp  vanilla extract

4 thick squares of dark chocolate

If you’re making this gluten free use a gluten free flour blend, Robin Hood makes a pretty good one and it’s easy to use because it’s already pre-blended. For a dairy free version use a dairy free milk, really any you have on hand will work well in this recipe. Also make sure the chocolate you use is dairy free as well.

Simply mix the dry ingredients together in a bowl and give a quick whisk. Now stir in the wet ingredients and mix until well combined and lump free. Divide equal portions into 4 mason jars or mugs.

Now press a square of chocolate into the centre of each mason jar and then microwave on high for a minute or two. Each microwave is different so keep an eye on it. You want the outside of the cake to look cooked but the centre still to be a bit runny, it will firm up slightly as it cools.

I like to serve this with a scoop of ice cream, some chocolate or caramel drizzle…or both lol…and a few toasted nuts.
