Banana Bread
This is one of my family’s faves! Quick, easy and so delicious.
2 1/2c Flour
1c Sugar
2tsp Baking powder
1tsp Baking soda
1/2tsp Salt
3 Large mashed bananas
2 Eggs
1/4c Oil
2tsp Vanilla
Water
**The amount of water you need is dependent on the size and ripeness of your bananas so rather than having a set amount of water I add just enough water to make a thick batter.
This recipe couldn’t be easier! Simply pop all the dry ingredients into a large mixing bowl and give it a whisk.
Then add the wet ingredients and add a splash of water. Give everything a good stir… if it’s too thick add more water, if it’s the consistency of a thick cake batter then you’re done.
*Tip- I pop my whole peeled bananas into a ziplock bag then toss all the other wet ingredients into it. Squish it all up until the banana is mashed and the eggs are incorporated. Then I simply squeeze it into my dry ingredients and give it a good stir. Adjust the water as needed. Easy peasy!
Pour the mixture into a greased loaf pan and bake at 350 degrees F for about an hour or until a toothpick come out clean.
Let cool in the pan for about 15 minutes before tipping it out onto a cooling rack.
