Savoury Tomato Jam
3 cloves of garlic (crushed)
1 onion (finely minced)
2tbs olive oil
1 large can of good quality diced tomatoes
1c brown sugar
1 lemon (juice)
1tbsp balsamic vinegar
1tsp ground cumin
1⁄2tsp cinnamon
1⁄4tsp ground cloves
1tsp salt and pepper
1 dried red chili (crushed)
Sautee the garlic and onion with olive oil in a medium sized saucepan until it becomes fragrant. Now add the rest of the ingredients and bring to a boil over medium heat, stirring often. Once boiling reduce the heat and simmer, stirring occasionally until you get the consistency of thick jam. This takes about 1 hour. Adjust seasoning if necessary, you may need more lemon juice or salt. Cool the jam and refrigerate it until ready to use; it will keep at least a week.
