Mexican Rice
Serves 4.
3tbsp oil
1c rice
2 cloves garlic (minced)
1/4 onion (minced)
1/2tsp salt
1tsp cumin
1tsp paprika
1/2 can of tomato paste
2c chicken broth
cilantro for garnish
Put the oil in a large saucepan over medium heat. Now add the rice and stir until it lightly browns, it usually takes about 5 minutes.
Stir in the remaining ingredients and turn up the heat to medium high until the majority of the liquid has evaporated and you can clearly see the rice at the surface. Cover with a tight fitting lid for 20 minutes...no peeking!!!! Fluff with a fork and serve with a sprinkle of chopped cilantro.
Tip- If you like a little kick you can add some chopped jalapeños or red chillies.
