Mexican Blackened Peppers and Onions
1 each, red, green, yellow, orange peppers(cut into strips)
1 large onion (cut half and then into strips)
1tsp cumin
2 cloves of garlic (minced)
1 lime (Juice)
salt and pepper to taste
drizzle of olive oil
Put everything into a nonstick pan on high heat and give it a toss. Cook just long enough for everything to soften slightly...you still want a little bit of crunch to the peppers.
*Tip- In order for the peppers to blacken slightly don't stir very often.
