Fajita Style Chicken

Serves 4.

4                boneless skinless chicken thighs (cut into strips)

1tsp            salt

1tbsp          paprika

2tsp           cumin

1/4tsp        pepper

2tsp          chilli powder

2               cloves of garlic (minced)

1tbsp        tomato paste (harissa paste if you like spice)

1                lime (juice)

Pop all the ingredients into a bowl and give it a stir. Let marinate for 30 minutes to overnight. 

Once marinated just toss everything into a large non-stick pan with a drizzle of oil. Cook on medium heat for about 15-20 minutes or until the chicken is cooked through. 

I serve this in Fajitas, on salads or even on a bed of rice.
