Ginger Garlic Chicken
This quick and simple dish is delicious served with my Black Sesame Rainbow Peppers.
Serves 4.
8 chicken thighs (boneless skinless)
1 thumb sized piece of fresh ginger (grated)
3 cloves of garlic (minced)
2tbsp honey
1/2 red chilli (finely chopped)
1 lime (juice)
salt to taste
Toss all the ingredients in a bowl and give it a toss. Let marinate in the fridge for at least half an hour to as much as over night. Remove the chicken from the marinating liquid and place in an oiled nonstick pan on medium. Cook for about 5 minutes per side or until the juices run clear and there is no pink remaining in the center.
I like to serve this with my Coconut Lime Rice and Black Sesame Rainbow Peppers.
