Spanish Chorizo and Kale Pasta

This is one of my favourite pasta dishes! It's quick, easy, healthy and full of flavour. I'll sometimes even serve this with rice or quinoa to change things up a bit. As far as I'm concerned this is a perfect weeknight meal.

4         fresh Spanish Chorizo (sliced)

1/2      red spanish onion (slivered)

3       cloves of garlic (thinly sliced)

2c      fresh San Marzano tomatoes (cut in half)

1/2     540ml can of Romano beans (drained)

1/4 c  white wine

1        water

1        large bunch of kale (any variety)

1        handful fresh parsley (chopped)

drizzle of olive oil

salt and pepper to taste

1-2tbs   butter (optional)

8c         cooked pasta of your choice

 

Drizzle a little olive oil in a large non-stick pan on high heat. Toss in the sliced chorizo, garlic and onion and sauté until the onions have softened and the chorizo is browned.

Now simply add the remaining ingredients and simmer until the sauce has lightly thickened and the kale and tomatoes are to your desired doneness.

Stir in the butter if you are using it and season with salt and pepper.

Serve on top of your cooked pasta and you're done! Enjoy.
