Guilt Free Dark Chocolate Brownies
Okay, I'm not one for healthy desserts, desserts are supposed to be a treat so frankly I couldn't care less if they are healthy or not. My thought process though, has always been if you can make it healthier without affecting the flavour or texture why the heck wouldn't you?!!!!! This just so happens to be one of those recipes. It's quick and easy to make and tastes like every other fattening decadent brownie you've ever had. So enjoy your dessert with a little less guilt.
1 1/2c flour
1c sugar
1/4c unsweetened cocoa powder
1/2tsp baking powder
1/2tsp salt
1c chocolate chips
1/2c coffee
1/2c water
1tbsp vanilla
1c canned pumpkin puree
Preheat the oven to 375 degrees.
Simply mix the dry ingredients together in a large bowl. Now whisk the wet ingredients together in a separate bowl. Pour the wet ingredients over the dry and give a good stir until all the the dry ingredients are will incorporated...don't over mix.
Now simply pour the ingredients into a shallow parchment lined 9 X 9 baking pan. You can garnish the top with a few crushed nuts and some chocolate chips if you'd like. Bake for 25 minutes or until the brownie springs back when you gently press down on the centre.
Let cool completely before cutting.
