London Fog Oatmeal!!!!!
How AMAZING does this sound?!!!!! It's off the charts delicious and shockingly healthy...what more could you ask for in a breakfast. This is quick and easy so it's do-able as a weekday breakfast but special enough for a weekend brunch. Here's how I make it... The recipe is laid out per serving because during the week I'm the only one that usually eats it. If you want enough for 4 servings simply quadruple the recipe, you get the drift.
Boil 1 cup of water in a pot. Once boiled turn off the heat and place 3 Earl Grey Tea bags into the water. Once the tea is really strong remove the teabags.
Turn the heat back on to medium-low and add:
1/4c old fashioned oats
1/4c steel cut oats
1/4tsp chia seeds
1tsp vanilla
tiny pinch of salt
Cook until most of the water has been absorbed and the steel cut oats have softened. This usually takes about 8 minutes or so.
For the fog:
I use Vanilla Almond Milk and pop it in my milk frother. If you don't have a milk frother you can simply warm your milk in the microwave.
TIP- If you happen to have some vanilla syrup on hand you can use that instead of regular vanilla, it adds just the right hint of sweetness. I always have the Starbucks brand on hand because it makes the BEST vanilla whipped cream!
